Resorts World Catskills in Monticello continued its Grand Opening festivities on May 21 by officially welcoming Cellaio to the resort with a ribbon cutting ceremony and a special reception! Chef Scott Conant’s Italian-inspired steakhouse promises the perfect dining experience for your next trip.
The Grand Opening
A former student at the Culinary Institute of America in Poughkeepsie, Scott Conant says the opening of Cellaio is important to him personally. “It is great to come back to the region to open Cellaio at this beautiful resort,” he said in a statement. “The area is all about being inspired by the people and natural beauty, which is what Cellaio hopes to bring to the table to complement the Resorts World Catskills experience.”

Earlier this month, Resorts World Catskills had its Grand Opening celebration, which a included performance by award-winning singer and songwriter Gavin DeGraw, as well as a celebrity-studded Grand Opening Gala. VIP guests from the region included Phil Simms, Neil Patrick Harris, and Adrian Grenier.
The casino resort features an 18-story all-suite hotel and casino and entertainment complex, including live Las Vegas style table games, slot machines, a poker room, and private gaming salons.
